STEPHEN Schwarz, owner and chef of trendy Mat & Naddie's Café overlooking the Mississippi, and Chef Clint Whittemore will bring their special brand of classic French Creole cuisine to Cape Grace on the V&A Waterfront between November 28 and December 2. They will join Cape Grace executive chef Uwe Grote to prepare menus including some great examples of classical New Orleans Creole dishes as well as a few modern variations on old classics. Some delicacies include ginger barbecued shrimp, cane syrup lacquered Duck and bronzed fish topped with crabmeat. For the meat lover there's scrumptious roast pork medallions in a caramelised onion and pancetta crust and seared venison medallions with wild rice pancake and braised bitter greens served with an apricot reduction and sour cream. The array of Creole delights are on offer for the jazz brunch on December 2, where jazz lovers will be able enjoy a taste of the vibrant New Orleans café vibe with live jazz performances. The festival of Creole cuisine will take place at the hotel's Quay West restaurant overlooking the yacht marina. (Miguel de Sousa)
