Air France’s gourmet menu flies high

Air France has unveiled its new menus for long-haul business-class passengers, including on its Johannesburg and Cape Town to Paris routes.

The new menus, which will be available for the next three months, were created by French Michelin-star chef Anne-Sophie Pic and the Meilleurs Ouvriers de France pastry chef Philippe Urraca in collaboration with Servair, a leading flight caterer. 

In line with a responsible approach, seasonal local vegetable produce is used. All meat, dairy products, and eggs are of French origin, and the fish is from sustainable fisheries. In addition, vegetarian menus are available in every class on all Air France flights.

This season, Pic created eight menus that include fusion items such as chicken supreme with sake and roast parsnip with dill butter, curry and walnuts. 

“For Air France customers, I've created some unique dishes highlighting French produce. I've worked on them by playing on the combination of original flavours and the strength of the tastes,” said Pic. 

Business-class passengers can pre-select their hot dish up to 24 hours before their flight, guaranteeing the availability of the customer’s choice and also minimising waste.
