Seabourn introduces Alaskan cuisine

To enhance the Seabourn Encore's inaugural Alaska season in May, Seabourn has introduced a new culinary programme that showcases regional delicacies.

The new offerings comprise a series of dining experiences that unfold across The Restaurant and The Colonnade, including a first-night sail-away, a mid-cruise family dinner and more, that feature unique new menu items.

Locally sourced seafood and foraged ingredients, such as Alaska king crab, weathervane scallops, foraged regional mushrooms and Copper River salmon, are incorporated into high-end culinary experiences and menus.

A highlight is the Alaskan Seafood Boil, an immersive three-course experience served in The Colonnade, centred on an individual pot of king crab legs, Alaskan salmon, mussels, bacon wrapped scallops and shrimp. 

Another unique experience is the Midnight Sun Dinner at The Restaurant. The menu features dishes such as wild mushroom consommé, Alaska king crab salad, olive oil poached black cod and baked Alaska.
